Cream of mushroom soup with cream and other recipes
Mushroom cream soup made from champignons is loved by millions of people all over the world for its velvety, rich and fragrant taste. Such a dish is present in the menu of almost any restaurant. But, in order to taste this soup, it is not at all necessary to go to public institutions: you can cook it at home.
Champignons - extremely tasty mushrooms, and even with one important advantage: they have very few calories. So you can indulge yourself with dishes from such gifts of nature at least every day. And in these mushrooms there are many amino acids that are beneficial to humans. Therefore, you simply must learn to cook mushroom cream soup of champignons. The recipe is simple - let's get started!
Classic option
Ingredients
- 0.5 kg of fresh champignons;
- onion - 1 pc. medium size;
- 50 g butter;
- 2 tbsp. l flour;
- a small pack of 20% cream (200-400 ml);
- vegetable oil for frying - 1-2 st. l .;
- salt, spices - at your discretion.
Cooking
- Peel and wash the mushrooms. Let the water drain.
- Smallerly cut the onion into cubes (best use a blender).
- Heat the pan, pour in the vegetable oil and fry the onions until it is browned.
- Cut the mushrooms into thin plates and send them to the fried onions in the pan. Roast for about 5-7 minutes, stirring occasionally, until the water evaporates.
- In a small saucepan, melt the butter, then add a little flour. Cook for 1-2 minutes while stirring.
- Pour in the cream and put the mushrooms with onions. Bring to a boil.
- Whisk this mixture in a blender.
- Return to pot, salt. Simmer under the lid for 10 minutes.
Cream of mushroom soup with cream of champignons should be served hot. Soup can be decorated with greens, crackers or chopped walnuts.
This recipe is a variation of the first one (above). Additionally, you will need to boil 2 medium potatoes and, cut them into pieces, send in a blender to fried mushrooms and cream (after step 7). Then follow step 8.
This soup will be thicker, so maybe you need a little more cream.
Mushroom cream soup of mushrooms in chicken broth
Ingredients
- 0.5 kg of fresh champignons;
- 0.5 liters of chicken broth;
- onion - 1 pc. medium size;
- 50 g butter;
- 2 tbsp. l flour;
- a small pack of 20% cream (200-400 ml);
- vegetable oil for frying - 1-2 st. l .;
- salt, spices - at your discretion.
Cooking
- Cut the cleaned and washed mushrooms into thin slices.
- Crush the onion in a blender.
- Heat vegetable oil in a pan and fry onions. When it becomes rich golden color, add mushrooms. Broil for 5-7 minutes. The liquid must boil over. Salt it.
- Put the onions and mushrooms in a blender and chop.
- Melt butter in a saucepan and add flour to it. Stir. Pour in the chicken broth. Cook for 1-2 minutes.
- Add the cream and the mixture of mushrooms with onions.
- Bring to a boil, then reduce heat to low and cook another 10 minutes.
- Season with spices (such as pepper or nutmeg).
- Soup can be decorated with chopped dill, cilantro and crackers.
This variant of mushroom cream soup is more nutritious due to chicken broth.
You can vary the recipe and instead of mushrooms, take white or chanterelles. In this case, the mushrooms must first boil for 15-20 minutes, and then fry. It turns out also extremely tasty, but, of course, it will be a completely different dish.
