Soup with meatballs and vermicelli
With pasta, you can quickly cook the perfect first dish with a delicate flavor. And the absolute leader in the culinary category of the hottest first is the noodle meatball soup. By the way, by the number of fans this dish is not inferior to traditional Ukrainian borsch and Russian scham.

- allows the use of minced meat from any meat - pork, beef, chicken and even turkey meat (the main thing is to be low-fat);
- it can be cooked in meat, vegetable broth or fried;

The dish in any variant turns out very fragrant, rich and tasty. And most importantly, it is not difficult to cook it in a saucepan and a slow cooker.
How to cook the "right" meatballs?
Until recently, whole generations of women believed that the first with meat balls turns out to be more rich if it is kept on the stove for a long time. In fact, any step-by-step recipe with photos of meatball soup with noodles can be realized in literally 40-50 minutes, and the fat will be sufficient. It is only important to properly prepare the main meat component.
Ingredients:
- 600 grams of minced meat;
- 1 onion;
- 100 grams of dried unleavened bread;
- salt, pepper (to your taste).
Cooking:
- In the water soak crackers.
- Mince salt, pepper.
- Onion finely shred.
- Mix all the products, not forgetting to "throw" a ball of meat on the table, to give the texture of minced smoothness.
- We send the workpiece for 20 minutes in the fridge.
- Form the meatballs. The most convenient way is to make them the diameter of a gooseberry berry, since too small ones will quickly fall apart in the soup, and more, on the contrary, will not boil down.
And one more important nuance: in no case can you add an egg to minced meat! Otherwise, the soup will turn into porridge due to the fact that the meat balls will be boiled soft.

Traditional soup
This soup is cooked in an onion, carrot and tomato paste.
Ingredients:
- 400 g minced meat;
- 3 liters of filtered water;
- 4-5 potatoes;
- 1 onion;
- 1 carrot;
- 1 tbsp. l tomato paste;
- 100 grams of vermicelli;
- 3 tbsp. l olive oil;
- salt (to your taste);
- 1 bunch of greens (dill and parsley).
Cooking:
- We clean the potatoes and cut into thin sticks.
- We put water on medium heat, bring to a boil.
- Onions and carrots finely chopped, fry in olive oil in a pan.
- Add tomato paste to vegetables.
- Fall asleep in the meatballs, frying and potatoes.
- When the balls pop up, put vermicelli in the soup, salt.
- Cook until ready, 1 minute before the end of cooking, add the greens. The soup is ready.
For spice in the first, you can add 2 tbsp. l tomato paste or 2 diced tomatoes.
Dietary first
If there is a need to minimize the fat content in meatballs, then you should use the second broth, and the first one after boiling should be drained.
Ingredients:
- 350 g minced meat;
- 4-5 potatoes;
- 100 grams of pasta;
- 1 onion;
- 1 carrot;
- 2 celery stalks;
- salt, pepper (to taste).
Cooking:
- Pour meat balls into boiling water and after 4-5 minutes pour this broth.
- Pour water again, put onion, carrot, bring to a boil and throw meatballs.
- Potatoes clean, cut into cubes.
- From the broth we get onions and carrots. Orange vegetable cut into small squares. Onion is thrown away.
- Add potatoes and carrots to the soup.
- After the potatoes have boiled, add the noodles, add some salt.
- We try pasta readiness, turn it off and let it brew for 15-20 minutes.
Recipe with mushrooms
Enhance the flavor of the soup can be quite easy: you just need to add mushrooms to the dish. You can use and forest, and become so familiar champignons.
Ingredients:
- 400 g minced meat;
- 2.5 liters of broth (chicken or beef);
- 300 g of mushrooms;
- 100 grams of vermicelli;
- 1 onion;
- 5 potatoes;
- 1 carrot;
- 3 tbsp. l olive oil;
- 2 leaves of laurel;
- salt pepper.
Cooking:
- Wash the mushrooms with water, cut into 4-5 parts and fry in a heated pan with the addition of oil.
- Chop onions and carrots (you can use a blender).
- Add vegetables to the mushrooms, mix.
- We put meatballs, potatoes, laurel and mushrooms with vegetables in boiling water.
- When the potatoes are soft, pour the noodles, add some salt.
- Cook until done. Do not forget to remove the bay leaf from the soup, otherwise the aroma will become too concentrated.
Cooking in a slow cooker
Those who prefer to cook in this device, you can successfully use any of the above recipes. And you can use the classic method of cooking soup with meatballs and noodles in a slow cooker.
Ingredients:
- 400 g minced meat;
- 70-80 grams of vermicelli;
- 1 onion;
- 4 potatoes;
- 1 carrot;
- 2 tbsp. l vegetable oil;
- salt (to your taste);
- 1 tsp. hop-suneli condiments;
- 1 bunch of greens (dill, cilantro).
Cooking:
- Coarsely chop the carrot, chop onions finely.
- In a multi-cooker bowl, pour the oil and spread the vegetables. Set the "frying" mode for 10 minutes, stirring constantly.
- Potatoes cut into thin strips.
- Fill zazharku water, add potatoes, meatballs and hops-suneli. We put the mode "quenching" for 1.5 hours.
- 15 minutes before the timer signal add vermicelli and greens. The soup is ready.
Soup with meatballs with noodles can be cooked in a saucepan and in a slow cooker.
