The fact that the marshmallow cake does not require an oven does not mean that it is easy and simple to work with: due to the peculiarities of the recipe, it is prepared for almost 4 days, although the main process takes only 30-40 minutes. But it will be soaked for several days, so this recipe is not an option if the guests are on the doorstep. An electric coffee grinder and a mixer are useful from the improvised means: it will be difficult to do without them.

Cooking:
- At the starting stage, all ingredients are prepared. Nuts must be crushed into a crumb, which is most convenient to do through a coffee grinder. If not, you can use a blender with a special nozzle or a simple meat grinder. In the absence of the above devices, you can chop the nuts by hand as follows: put in a bag, wrap with a towel, and walk a few times over the nuts with a rolling pin or a wooden meat hammer. Some hostesses chop nuts with a knife, but it takes a lot of time.
- Now comes the turn of the marshmallow. If it is doubled, the halves need to be separated from each other, and after that each tip is removed from each of them. The necessary peculiar flat "medallions" of marshmallow, but the cut peaks are not thrown away - they will be useful later. Cookies, similar to nuts, need to scroll in a blender and poured into a separate bowl: it will be added to the cake at the last stage.
- The form for this cake is detachable. According to the specified number of components, it is optimal to be round, with a diameter of 25-27 cm. The marshmallow fit tightly in it so that there are no gaps on the bottom layer: they are closed with previously cut off caps. - Vanilla sugar and other ingredients are added together with regular sugar, if necessary.
There is a simpler and less high-calorie recipe for custard, which can be used for marshmallow cake. Already 400 ml of fresh milk, as well as 3-4 large eggs, vanilla sugar, 50 g of powdered sugar and the same amount of wheat flour are spent on its creation. Eggs and whites are separated in eggs, the latter can be utilized - they will not appear in the cream, but you can make meringue cakes from them. The yolks are whipped with powdered sugar and vanilla sugar, gently trickling into the milk boiling on the stove, and the liquid is mixed to a uniform consistency. Then flour is poured in there, the power of the burner is reduced to a minimum, and the cream is cooked to a thickness.
But the easiest and fastest marshmallow cream cake without baking is protein. To do this, take 3-4 egg whites, which must be cooled, the same cold water in a volume of 100 ml, and powdered sugar - 200 g. Either powdered sugar and cocoa powder are combined in a ratio of 3: 1 if you want to get chocolate cream . Water must be boiled together with powdered sugar, boil over medium heat for 40 minutes, and pour cocoa powder into the syrup. While the mixture continues to boil, but at low power, in a separate bowl, the whites are whipped with a pinch of salt and a drop of lemon juice. As soon as the proteins turn into a non-falling foam, the resulting syrup slowly pours in, slowly cooled in advance. Finally, the cream is whipped for 5-7 minutes. in a blender or mixer.

Fruits are also divided into small thin circles, with the exception of strawberries - it is enough to cut it in half, if the berries are not large. Dried fruits can be used without grinding. If you use frozen fruits and berries, you need to remove excess moisture from them before starting to collect the marshmallow cake, otherwise all the liquid will be in it. In addition, if you wish to use citrus fruits (for example, tangerines), sour cream is better to replace with protein custard.
- Now you need to knead the cream: from the cream (they are in this case preferable to the cream), excess liquid is removed, they are combined with powdered sugar and whipped at medium speed through a mixer. The duration of the process depends on the fat content and freshness of the main product, therefore, be guided by the appearance of the mixture: you should get a strong air mass.
