Frozen berry compote

It is believed that frozen berries, fruits and vegetables do not carry any benefit in themselves, but this is far from being the case. It is proved that the frozen gifts of nature are almost as good as their fresh counterparts. Berry season flies quickly, so many people freeze the fruit for the winter. Of these, you can make an incredibly delicious compote!

The best way to store berries is quick freezing. With simple freezing, there is a gradual cooling: from 0 degrees to -5, and then from -5 to-18. And with fast freezing, the product is affected by a shock temperature of -40 degrees, due to which all nutrients remain intact. But besides the benefits, the berries must be tasty, for this you need to follow a number of rules:

  • too juicy berries are best laid out on a tray in an even layer and freeze, and after that, put them in containers or bags;
  • rotten and overripe fruits can not be frozen !;
  • immediately before freezing the berries should be thoroughly rinsed in water and dried;
  • it is better to pick freshly picked fruit for freezing;
  • leaves, seeds and stems must be removed before freezing.

Compote of frozen berries: how to cook?

But how to store such products? Berries, the skin of which differs in density (cherry, currant, mountain ash), it is better to immediately freeze in bags or containers. To ensure the safety of the benefits will help freeze with sugar. For this, the berries should be laid out in layers, each of which should be sprinkled with a small amount of sugar.

Easily deformable and overly fragile fruits are easier to grind into mashed potatoes, pour sugar in there, add a little lemon juice, pour into containers and freeze in this form.

Sweet cherries, red currants and grapes do not freeze well; they lose their taste and become fresh in this process. If the freezing procedure was observed correctly, then the shelf life of such products ranges from 8 months to a year, everything depends on the type of berries.
