  • White cabbage - 0.5 head;

  • Onion - 1 pc .;
  • Carrots - 1 pc .;
  • Bulgarian pepper - 1 pc .;
  • Celery - 1 stalk;
  • Tomato - 3 pcs .;
  • Sunflower oil - 2.5 tbsp. L .;
  • Water - 4 liters;
  • Parsley greens - 30 gr .;
  • Bay leaf - 2 pcs .;
  • Salt, black pepper, garlic, sour cream - to your taste.


  • Cabbage and pepper chop, chop zucchini and celery stalk, grate beets and carrots.
  • Boil water, put chopped vegetables and peeled onion in it.
  • Add vegetable oil, salt, pepper to the pan and cook for 25-30 minutes.
  • Knead the pulp of tomatoes, if desired, in advance, tomatoes can be scalded and removed from the skin. Put the tomatoes in the soup, cook for another 10 minutes.
  • 2 minutes before the end of cooking put chopped greens in the dish.
  • Before serving, place a spoonful of sour cream and a clove of garlic in a plate.

Beetroot borsch for slimming - recipe number 2


  • Water - 3 liters;
  • Beets - 3 pcs .;
  • Beef lean - 300 gr .;
  • Parsley root - 1 pc .;
  • Celery root - 20 grams;
  • Butter - 30 gr .;
  • Tomatoes - 3 pcs .;
  • Onions - 2 pcs .;
  • Parsley - 30 g;
  • Sour cream, garlic, salt, pepper - to taste.


  • Cook beets, peel, chop sticks.
  • Wash beef, cut into slices and put cook for 45 minutes.
  • Put the cleaned onion head whole in the pan with the meat.
  • Put the finely chopped celery and parsley roots in a meat pot.
  • After 40 minutes, put chopped tomatoes, beets, butter, salt, pepper, finely chopped parsley in the pan and cook for a few more minutes.
  • Before use, add garlic and sour cream.

A whole onion, put in borscht, can incorporate the harmfulness of vegetables bought in supermarkets. Nitrates in boiled vegetables are less dangerous for health. Oxalic acid contained in borscht should be neutralized with sour cream, this will improve not only the taste of the dish, but also increase the beneficial properties.

Although some nutritionists claim that borscht is not a good dish, but the culinary experience of thousands of years refutes any fears. Of course, it is more beneficial to eat all the vegetables raw, but not everyone is ready to decide to become a raw foodist or a vegetarian, so for those who watch their figure and are not supporters of separate meals, vegetable borscht can become a hearty and balanced meal.
