The well-known expression that time is money can be rephrased as follows: time is health. This statement is relevant when it comes to the freshness of products, especially natural, not "stabilized" preservatives. For example, in order not to harm yourself and loved ones, to prepare healthy dishes, you need to uncompromisingly observe the shelf life of eggs in the refrigerator.
No matter how much thirsty hostesses want to buy products for the future, the storage of this type of food must be treated carefully. Eating expired eggs is dangerous to health: serious food poisoning can develop. If the product is stale, there is a high probability that it contains the pathogenic bacteria that causes salmonellosis. Therefore, it is impossible to exceed the shelf life of eggs in the refrigerator, to violate other sanitary and hygienic requirements.
How to store, so that health does not harm?
In some outlets you can find eggs labeled "D". This means "diet egg", and its "lifespan" - 1-7 days. Such a product is valued more than others, since it contains a maximum of useful elements. Another type of eggs is labeled "C" or sold unlabeled. These are table eggs, which can be stored for a rather long period of time at home. It is important to pay attention to the date of manufacture of the product.
The most popular habitat for bird eggs is the refrigerator. For them, manufacturers of home appliances and special trays provide. It is the temperature regime of this unit is considered optimal. Shelf life of eggs in the fridge (raw):
- 25 days, during which they can be eaten with a slight heat treatment;
- 45 days - at the end of the above period it is allowed to eat boiled eggs (only hard boiled).
If you plan to feast on raw eggs, then only a dietary type is suitable for such a case.
Before this, it is recommended to wash the shell with warm water with soap. If the shelf life of chicken eggs in the refrigerator exceeds 7 days from the date of manufacture, heat treatment is inevitable for them. Products whose shelf life is already running out, it is better not to use as an independent dish. She would prefer to find application in the test.
Suitable packaging for eggs - special trays made of plastic, cardboard or containers. Packed in this way, the product is protected from the penetration of other foods through the shells. Eggs are most susceptible to the smell of fish and citrus. Sometimes they take on the aromas of spices, mushrooms, smoked products. Therefore, it is advisable to isolate the eggs in special compartments, packages.
Particular care should be taken when storing cracks on the shell. Such products should be used as quickly as possible. Damaged eggs can deteriorate in just a few days - even with proper storage in a cold place.
The usual place for a "gift from the birds" in the fridge - on the door. But, in order to prolong the time of the "first freshness" of the product, it is recommended to choose compartments where the temperature is the lowest. Acceptable temperature range for chicken and quail eggs - from +3 to +20 degrees.
By the way, the shelf life of quail eggs in the refrigerator is up to 90 days. Such a long duration is possible due to the presence of an amino acid in the quail eggs, which is detrimental to bacteria of certain species. Turkey eggs are stored as much as chicken eggs. But duck and goose can be kept in the refrigerator for no more than 14 days.
Boiled eggs: storage features
If boiled eggs did not have time to eat immediately, you can hold them for a while in a cold place. However, do not leave them there for an indefinite period in the hope that the heat treatment has destroyed all the "extra" microorganisms that provoke damage. On the contrary, the shelf life of boiled eggs in the refrigerator is different compared to the raw, more rigid framework:
- untreated stored 3-4 days at a temperature of from 0 to +5 degrees;
- Peeled can be left only for 2 days at a temperature range from 0 to +3 degrees. Products must be in a container with a lid (glass, plastic, metal - not fundamentally).
Egg freshness: trust but verify
If the product was purchased in a store and there is a designation of the date of manufacture on it, it is easy to determine its shelf life. The situation is different when buying eggs on the market, in households. If you have any doubts, it is better to be convinced of the real freshness.
The proven folk method will show if the "gift from the bird" has gone bad. To do this, prepare a solution of 1 tbsp. l salt to 1 liter of water. The egg must be immersed in the prepared liquid: if it does, it means that it does not fit on the table.
Product storage is allowed outside the refrigerator. A dark and cool place is suitable, where the humidity is no more than 85%. But it’s not worth leaving eggs there for a long time.
Egg freshness is a prerequisite for the benefit and safety of this product. If you do not comply with the shelf life, you can call trouble in the form of dangerous food poisoning, bacterial infections. For raw chicken eggs, a refrigerator is best suited for which they can stay for quite a while. But even under such storage conditions, the freshness of eggs should be the object of close attention.
