We all know about the benefits of dairy and dairy products. The phrase "Children drink milk - you will be healthy!" repeatedly confirmed its value. But milk is not the only dairy product of animal origin. On its basis are produced: kefir, yogurt, cottage cheese and cheeses, cream and sour cream, yogurt and whey, as well as a wearer.
What is this drink?
The popular electronic encyclopedia Wikipedia gives the following explanation: ryazhenka is a sour milk drink, obtained by lactic fermentation of cow's baked milk. It seems everything is clear. And what kind of baked milk is it?
Baked milk will be in the process of its long-term heating. It is as if "languishing", but it does not boil. A few hours later, it turns out, "baked" milk drink. Here it is then made ryazhenka.
For ferment, because ryazhenka should become a fermented milk, thermophilic lactic acid bacteria are used. After 3-6 hours, the drink is ready to drink.
The difference between kefir and ryazhenka
We widely demand 2 fermented milk drinks - ryazhenka and kefir. Perhaps the last in popularity beats all records. This fermented milk product can be found in the menu of many diets and healthy diets, while ryazhenka doesn’t practically say that. The question arises: what is more useful - ryazhenka or kefir?
Undoubtedly, both products are useful. Lactic acid bacteria contained in beverages have a positive effect on the quality of health and human life expectancy. Getting to our body, they come to the aid of our own lactic acid bacteria, enhancing their protective functions.
In the process of ripening these sour-milk beverages, different technologies are used. As we have already learned, in order to make ryazhenka, milk must first be “crushed” and only then subjected to fermentation. Kefir is obtained from whole milk without prior "languishing", but also in the process of fermentation.
Hence, the first difference is the quality of raw materials (milk). The second is a set of components for the leaven. When receiving ryazhenka in raw materials add thermophilic streptococci and acidophilic bacilli. And the fermentation of kefir is due to the connection of yeast, milk-acetic bacteria (more than 20 items in total).
And yet, kefir or ryazhenka - which is more useful? Experts say of these two sour-milk beverages healthier ryazhenka. And all because in the process of a long "languor" in the milk almost no extraneous bacteria remained.
The composition of ryazhenka
In ryazhenka, as in all dairy products, contains one of the most important "building" elements for our skeleton - calcium. So, in 1 tbsp. drink its amount is equivalent to the daily intake of this substance.
Another important element is phosphorus. Having drunk a glass of ryazhenka, you will receive 20% of the daily norm of phosphorus.

Lactic acids help to normalize the microflora of the stomach and intestines, improve the functioning of the digestive tract, increase appetite. On caloric content, ryazhenka exceeds kefir indicators (which is of great importance for a growing organism). On average, its performance is 40-85 kcal (depending on the composition of fats).

Useful or harmful ryazhenka at night? A glass of ryazhenka is quite suitable for pacifying the feeling of hunger, fast saturation or as an easy dinner. But due to their caloric value, nutritionists advise not to lean on the drink if you intend to lose weight.
About the dangers of the product can speak, if we consider a list of contraindications. So it is not advisable to use the drink for people with gastric ulcers and gastritis with high acidity. It is forbidden to use ryazhenka to those who are allergic to milk. By the way, intolerance affects all derivatives. Even in small quantities, milk can cause discomfort, bloating and even the urge to vomit.

Ryazhenka is easily digested. It is recommended to use for those who have calcium deficiency. - Fresh milk (2 l) bring to a boil.
- On low heat, leave to "languish" for 1.5 hours.

- Add to the saucepan 75-100 g sour cream.
- Kept warm for 6-8 hours.
