Rice in a slow cooker with vegetables - fresh and frozen

Often the hostess puzzles over what would be served to the main meat or fish dish - potatoes, buckwheat, pasta? If you are fed up with monotonous side dishes and want something new, try cooking rice in a slow cooker with vegetables. It's pretty simple, fast, useful and - not least - very tasty!

Rice with vegetables: a recipe in a slow cooker

This dish can be served as an original side dish, or independently. It is especially suitable for those who adhere to vegetarianism or observe fasting.

Ingredients:

  • long grain rice - 500 g;
  • carrots - 1-2 pcs .;
  • onion - 1 pc .;
  • champignons - 300-400 g;
  • vegetable or butter - 2 tbsp. l .;
  • salt.

Cooking:

  1. Prepare the champignons. If you use pre-cut mushrooms from a pack, you just need to wash them under cold water. But fresh champignons need to be cleaned (if they need it), washed and cut into thin slices.
  2. We grease a bowl of multicookers with vegetable oil (or, if you don’t mind the extra calories, put a piece of butter). Turn on the device.
  3. Finely chop the onion, fry it with the lid open.
  4. There we also add carrots, cleaned and cut into small cubes or half rings.
  5. We spread mushrooms and fry, stirring occasionally, until the excess liquid evaporates. We salt. Stir.
  6. We wash the rice with cold water several times (the water should become transparent) and spread it over the vegetables, add a little more salt.
  7. Fill everything with cold water (a glass of rice - 1.5-2 tbsp. Of water), close the slow cooker with a lid, set the valve to the "Closed" position and cook for 20-23 minutes.
  8. Let off steam, mix and lay out on plates.

How to simplify the recipe?

If you do not have time to stand at the slow cooker and stir with a spatula, there is another option: fold all the ingredients at once (chopped onions, carrots, mushrooms, rice), salt and cover with water. Cook time increased by 3-5 minutes. Such a dish will turn out even more useful (since there will be nothing fried in it) and is much more economical in time.

  • long grain rice - 400 g;
  • green peas (canned) - ½ b .;
  • canned corn - ½-1 b .;
  • carrots - 1-2 pcs .;
  • Bulgarian pepper (red) - 1 pc .;
  • onion - 1 pc .;
  • vegetable oil - 2-3 tbsp. l .;
  • salt, spices.

Cooking:

  1. Peel the onions, carrots. Cut the first as small as possible, and the second - in small squares.
  2. Turn on the slow cooker and grease its bowl with vegetable oil. Fold the onions and carrots there and fry them, stirring constantly until they are browned.
  3. Wash the bell pepper and peel it from the seeds and stalk, cut into squares, like carrots. Put it in the bowl.
  4. Pour the washed rice into a slow cooker, cover with water (it should completely cover the rice), salt and mix.
  5. Close the multicooker lid, set the steam release valve to the "Closed" position and set the timer to 20-23 minutes.
  6. At the end of time, let off steam, add corn and peas to the bowl, season with spices and stir well.

Cooking frozen vegetables with rice

To prepare such a dish will take you quite a bit of time. Vegetables can be used any: self-prepared and frozen or purchased (each variety individually or ready-mix).

Ingredients:

  • long grain rice - 1.5 tbsp .;
  • water - 2-3 st .;
  • frozen vegetables (carrots, broccoli, green peas, zucchini, pumpkin, cauliflower, green beans, etc.) - 400-500 g in general;
  • salt;
  • vegetable oil - 2 tbsp. l .;
  • olive oil - 3 tbsp. l .;
  • lemon juice - 2 tbsp. l .;
  • garlic - 2-3 cloves.

Cooking:

  1. Let's start with the sauce. Combine olive oil with lemon juice, squeeze garlic through a press and mix. Put aside.
  2. Wash the vegetables under warm running water, then rinse boiled or filtered.
  3. Lubricate the multicooker bowl with vegetable oil, turn it on.
  4. Put the vegetables, salt, pour the sauce, which you made at the beginning.
  5. Rinse the rice well with cold water, pour the vegetables on top and pour water (it should cover all the ingredients with a reserve of 1 cm). Add a little more salt to the rice.
  6. Close the multicooker with the lid, set the valve to the "Closed" position and cook for 23-25 ​​minutes. Then open the valve on the lid and let off the steam. Stir and serve.

Add to your favorite dish chicken meat

Ingredients:

  • chicken fillet (breast) - 2 pcs. medium or large size;
  • rice - 1 tbsp .;
  • leek - 1 pc .;
  • Carrots - 1-2 pcs. depending on the size;
  • cherry tomatoes - 250 g;
  • vegetable oil - 2-3 tbsp. l .;
  • salt, spices;
  • water - 1.5 st.

Cooking:

  1. Wash vegetables and chicken breast.
  2. Cut thin leeks into thin rings, place it in the bowl of the slow cooker, buttered. Turn on baking and fry the onions.
  3. Cut the chicken into small pieces (about 2 to 4 cm), send to the onion, salt and sprinkle with spices.
  4. While the chicken is roasting, peel the carrots, cut them into small cubes or strips (divide the root crop into 3-4 sections, then each part into another 6-8 strips). Add to bowl.
  5. There also send sliced ​​in half cherry tomatoes.
  6. Top with well-washed in cold water rice, salt and cover it with water.
  7. Close the multicooker lid, set the steam release valve to the "Closed" position and turn on the timer for 25 minutes.
  8. After this time, release the steam, open the valve, and mix.

Fans of exotic dishes can be advised to add canned pineapples to this recipe. Their sweetness will give the dish piquancy and variety of taste.

Ingredients:

  • long grain rice - 1 tbsp .;
  • Apple - 1-2 pcs .;
  • carrots - 1 pc .;
  • celery - root;
  • water - 1.5 st .;
  • salt.

Cooking:

  1. Rinse the rice well with cold water.
  2. Carrots clean, wash and rub on a coarse grater or cut into small cubes.
  3. Wash the apple, peel and cut the pulp into cubes.
  4. Do the same with the celery stalk.
  5. Grease the bowl of the multicooker with oil, put all the ingredients in it and mix them. Add some salt and cover with water.
  6. After closing the lid, set the steam release valve to the closed position and cook for about 22-25 minutes.
  7. Let off steam.

If you want a spicy dish, you can add 1 tsp to it. chopped ginger root, as well as tomato paste and 2-3 slices of garlic squeezed through a press. Such rice can be served with meat or as an independent dish.
