- Yeast pancakes are prepared according to a special recipe. Initially, the eggs are beaten into a foam mass with salt and granulated sugar. Then yeast, sunflower refined oil and part of the milk are added. Only after the flour has poured out can the remaining milk be poured. Knead the dough should be exactly in this sequence.
- To yeast, as they say, cleared, the dough is sent to a secluded place.
- In a few minutes the mass will double in volume. Dough upset once, and after the second approach, we begin to bake pancakes.
- Dough gently scoop ladle on top, without damaging the bubbly texture.
- If you want more holes, use mineral water with gas as a base.
- Do not add too much sugar: 1-2 tbsp. l will be enough for the yeast reaction.
- When baking the first pancake, grease the hot surface of the pan with fresh bacon or potatoes dipped in sunflower oil.
- Such pancakes can be prepared in advance and frozen. Then it will be enough for you to heat them in a frying pan or in a microwave oven.

If you bake pancakes on a yeast basis for the first time, be sure to strictly follow the prescription proportions. Just do not add too much sugar. - 11 g dry granular or powdered yeast;
- 0.3 kg of sifted high-grade flour;
- pinch of granulated sugar and table salt;
- 2-3 pieces chicken eggs;
- 2-3 art. l sunflower refined oil;
- 0.25 liters of milk.
- Drive eggs into a separate bowl and add granulated sugar, fine-grained salt.
- Using a whisk, a mixer or a blender, actively beat the mass until foam appears.
- We take a glass and heat the milk in a water bath, but not more than 37 °.
- Stir the right amount of yeast in milk and leave in this form for 15 minutes.
- Now pour the milk-yeast mass into a bowl with whipped eggs. Then in portions we add the sifted flour and again we all actively whisk.
- At the end we add refined sunflower oil to the dough, which will not allow pancakes to stick to the surface of the pan.
- Once again, mix everything well.
- Heat the pan.
- Ladle scoop the dough on top and pour it into the pan.
- Fry pancakes on both sides, so that they become golden in color.
Cooking pancakes in Slavic
If you want to surprise everyone around with knowledge of Slavic culinary traditions, try cooking pancakes according to the classic recipe. By the way, this recipe is universal in that either milk or filtered water can be taken as a basis.
- 2 tbsp. filtered water or warm milk;
- sugar to taste;
- 2 ½ tbsp. sifted fine flour;
- 3 pcs. chicken eggs;
- a pinch of salt;
- 1 tsp. dry yeast;
- to taste butter.
- Cooking pancakes on the classical technology implies the presence of sponge. From this we begin.
- Heat the milk or filtered water to a temperature mark of 35 °.
- Add yeast, 4 tbsp. l sifted high-grade flour, 1 tbsp. l sugar sand.
- All carefully stir and leave in a secluded place for 15 minutes.
- In a separate bowl, rub until smooth consistency of chicken eggs with sugar.
- Pour the egg mass into the approached brew and introduce the remaining components.
- Knead the dough, keeping the air consistency.
- Send the dough to the preheated pan.
- Fry on both sides, and then grease with butter.
