Prague cake is a famous confection. The original recipe of this cake is not easy to prepare, but its simplified version is within the power of any novice chef. Interestingly, a simple recipe was invented by a certain Vladimir Guralnik, who was the head of the confectionery shop of the restaurant of the same name. Thus, the pastry chef, who gave the Soviet Union the beloved "Bird's Milk" and 30 more recipes of the original desserts. Today, to enjoy the Prague cake you don’t have to go to the store; almost any housewife can cook it.

Prague Cake: A Step-by-Step Recipe for Beginners

Composition:

  1. Eggs - 4 pcs.
  2. Sour cream - 400 ml
  3. Butter - 250 g
  4. Flour - 0.5 kg
  5. Soda - 2 tsp.
  6. Cocoa - 200 g
  7. Sugar - 350 g

Cooking:

  • In a skillet, melt ½ of the total mass of butter. In another container, beat the eggs with 150 g of sugar into a thick foam.
  • Whipping, add to the mixture most of the sour cream, pour the melted butter.
  • Mix soda with flour, pour into a mixture and knead the homogeneous dough without lumps (by its consistency it should resemble thick sour cream).
  • Preheat oven to 200 degrees. Grease the baking dish with oil, pour the dough, distribute it in the shape of a cook hot oven.
  • The base for the cake is baked for about 30 - 40 minutes. Readiness check with a toothpick. While preparing the biscuit, get ready to prepare the cream and glaze.
  • In a deep bowl, whisk the cream with the remaining sugar, pour the cocoa. For the glaze, melt the remaining butter, add the remaining cocoa, a little sour cream and sugar. Boil the ingredients until thick.
  • Cut the finished biscuit into 2 or 3 identical pieces. Lavishly smear the cakes with sour cream and collect the Prague cake. Smear the cake with chocolate icing on all sides.

  1. Flour - 400 g
  2. Sugar - 250 g
  3. Sour cream - 250 g
  4. Condensed milk - 1 b.
  5. Butter - 300 g
  6. Cocoa powder - 6 tbsp. l
  7. Eggs - 3 pcs.
  8. Egg yolk - 2 pcs.
  9. Baking Powder - 10 g
  10. Vanilla sugar - 10 g
  11. Thick jam - 100 g
  12. Chocolate - 250 g
  13. Vodka or liquor - 150 ml

Cooking:

  • Mix flour and cocoa, sift the mixture through a sieve. Break eggs into a separate bowl, carefully separate the whites and yolks.
  • Beat more than half of the sugar with the yolks until a white foam forms. Combine yolks with ½ can of condensed milk, add leftover sugar and sour cream.
  • Using a blender, whip the mixture to a smooth consistency. Combine the protein and yolk mixture, mix. Pour the flour mixture.
  • Put the baking paper on the bottom of the mold, brush it with oil. Pour the dough into the form, bake at 200 degrees for an hour.
  • Ready biscuit is recommended to stand for 10 minutes on a damp kitchen towel, then remove it from the mold. Leave the biscuit on the night to reach - so it will be easier to cut into pieces.
  • Now you can start preparing the cream. Mix the yolk with water, gradually add the remaining condensed milk. Put the prepared mixture on the fire, do not stop stirring, bring to the boil. Under the boiling mixture, reduce the heat to a minimum and cook for about 5 minutes until the mass is thick enough. Condensed cream from the stove, let it cool.
  • Soften butter at room temperature, whip it with vanilla sugar. In the sugar-oily mixture, add the cooled cream, do not stop beating. Pour out the remaining cocoa and whisk again.
  • Cut the finished sponge cake into several cake layers of equal thickness, soak them in vodka or liquor. Each cake grease cream, collecting "Prague". Squeeze the latest cake with a thick layer of fruit jam.
  • Melt chocolate and butter in a saucepan. Stir the mixture thoroughly. Glaze the sides and top of the cake with icing.

  2. Cocoa powder - 7 tbsp. l
  3. Flour - 400 g
  4. Sugar - 300 g
  5. Butter - 350 g
  6. Condensed milk - 1 b.
  7. Milk - 50 ml
  8. Sour cream - 350 g
  9. Baking Powder - 10 g
  10. Wine, brandy or liquor - 2 tbsp. l
  11. Walnuts - 100 g

Cooking:

  • 1 tbsp. sugar rub with eggs, sift 1 tbsp. flour. Add sour cream, baking powder, 3 tbsp. l cocoa and wine. Mix all ingredients until smooth.
  • Cover the form for the cake with baking paper, grease it with oil and pour the dough. Bake the base for the cake at 180 degrees oven for half an hour.

Composition:

  1. Eggs - 6 pcs.
  2. Butter - 350 g
  3. Chocolate - 150 g
  4. Breadcrumbs - 70 g
  5. Almond - 150 g
  6. Icing sugar - 250 g
  7. Vanilla sugar - 10 g
  8. Rum - 2 tbsp. l
  9. Sugar - 150 g
  10. Margarine - 20 g
  11. Whipped cream - for decoration

Cooking:

  • Break eggs into a separate bowl, separate the whites from the yolks (leave 1 whole egg for the cream). Spread the yolks with ½ parts of powdered sugar and 175 g butter.
  • Crush almonds with a rolling pin or in a blender. Melt 100 g of chocolate in the microwave or in a water bath.
  • In the yolk mixture pour the crushed almonds, vanilla, melted chocolate. Mix the resulting mass well to avoid lumps.
  • Beat the whites in a fluffy foam, add breadcrumbs and combine with the protein mass.
  • Spread the cake pan with butter, pour the dough at 200 degrees for half an hour.
  • While the sponge cake is baked, prepare the filling. Spread the egg with the remaining butter, add powdered sugar and rum. Beat the ingredients until fluffy foam. Cool the prepared sponge cake, cut into 2 parts. Smear cream and collect the cake.
  • Now prepare the chocolate icing. Dissolve sugar in a small amount of water, add softened chocolate and margarine. Boil the icing, then cool. Iced the Prague cake with icing and decorate with whipped cream.
