The composition of the test:

  1. Wheat flour - 2 tbsp.
  2. Butter - 200-300 g
  3. Eggs - 2 pcs
  4. Egg yolks - 2 pcs
  5. Salt - ¼ h.

  1. Cream (20%) - 1 tbsp. (you can take milk)
  2. Sugar - 4 tbsp.

Cooking:

  • Let's start with the dough. To do this, you need to knead the oil to such an extent that a plastic mass is obtained. Mix milk with salt, and then combine the mixture with butter and flour.
  • Knead the dough for 5 minutes. It is necessary to continue this process until it acquires complete homogeneity. From the resulting dough you need to form a brick.
  • Before rolling the dough again, place it in the fridge for 30-60 minutes. Leisure time can be used for making cream.
  • To properly roll out the dough, you must put it on a table or board, which you first need to sprinkle with flour. Roll out the dough on the prepared surface using a rolling pin or wheelchair (if you have neither one nor the other, you can use a glass bottle). The dough should take the form of a rectangular cake, whose thickness will be 10 mm. The resulting rectangle is folded four times and roll again (again up to 10 mm) and again folded four times. Now the dough is ready.
  • The prepared dough should be rolled into a layer 4-5 mm thick, wrap it on top of the rolling pin and then turn it onto a non-greased baking sheet, the edges of which need to be moistened with water. Wetting prevents changing the shape of the cake during baking.
  • The reservoir must be evenly positioned on the baking sheet. In several places, a layer of dough should be pierced with the tip of a knife. The distance between the punctures should be from 5 to 10 cm. Bake the cake should be 25-30 minutes at an oven temperature of 210-220 degrees. Warm up the oven first.
  • After the layer is baked, remove it from the pan, put it on the board and allow to cool. While the cake is cooling, you need to cover it folded in half with a towel.
  • In order to prepare a cake, you need two such layers. You can also bake one large, which is then cut in half. While the layers are still warm, they must be made the same. To do this, you need to cut the uneven edges of the cake. After the alignment procedure, the layers should cool down almost completely.
  • Now you need to prepare the cream. To do this, place sugar, starch and eggs in an enamel pan. Mix all ingredients for 1-2 minutes. Then add the cream to the mixture and put the pan on the stove. Stir the future cream with a wooden spatula and heat until thick. Carefully ensure that the cream does not boil. Remove the finished cream from the stove and leave to cool.
  • Apply the ready and cooled cream onto one of the layers and level it with a knife. Place the second layer on top. Top and side layers must be lubricated with cream. On top of the layer of cream should be thicker than on the sides. Cutting the cakes that you have left after leveling, you need to chop finely with a knife. The resulting crumbs you have to sprinkle on the greased surface of the cake. Now you can serve the cake on the table. If desired, before serving, you can sprinkle the cake with powdered sugar on top.
