Liver cake recipes

You can make excellent liver cakes from the liver, which will appeal to even the most frenetic. The liver is different and therefore cakes can also be made from a different liver, which allows you to show room for imagination.

Chicken Liver Cake

To make it, you will need: 600 grams of chicken liver, a glass of milk, 200 grams of wheat flour, 3/3 teaspoon salt, three eggs, 100 ml of sunflower oil, 200 grams of carrots, two small onions, 200 grams of mayonnaise, a small bunch of parsley and dill

Chicken liver has a very delicate and elegant taste, and a cake with it will generally be a treat. This recipe is taken from Ukrainian cuisine and is perfect for a large festive table as a snack or second, and this is a very satisfying dish. By the way, this dish can be prepared even for the new year, simply by decorating the top with cheese chips and beautifully spreading the greens on top.

Preparation: Take the thawed chicken liver and wash it thoroughly, peel off the films. Then grind in a blender or meat grinder. Then we take eggs, milk, flour, vegetable oil, salt and add to the liver mass, mix thoroughly. Heat the pan, it is better to take a small pan so that the pancakes do not turn out to be too large, then pour the dough with a large spoon and bake a lot like regular pancakes on both sides. Butter for roasting should be added only for the first pancake, while others will be so well roasted, as they already have vegetable oil. After the pancakes are ready, set them aside to cool. At this time, grate the carrots on a coarse grater, cut the onion into medium half rings, salt and fry the vegetables in a frying pan in vegetable oil for about 5 minutes until a light golden crust appears. Then take the liver pancakes and lubricate well with mayonnaise, lay out a layer of onions and carrots, so repeat with each cake. Decorate the top pancake with greens and, if desired, decorate it with grated cheese.

Pork Liver Cake

You will need: a pound of pork liver, 2 table. spoons sour cream, 2 table. spoons of flour, one egg, one small onion, salt and black pepper to taste. For the filling: half a small jar of mushrooms or 6 fresh pieces, two medium onions, one carrot, two cloves of garlic, a couple of tables. spoons of mayonnaise, and a half table. spoons of sour cream, half a processed cheese, for example, "Friendship", greens.

Cooking First, make pancakes, take liver, onion, sour cream, flour, egg, add salt and pepper. You can also add seasonings that you like and blend all this into a blender until smooth. Fry the pancakes in a heated frying pan, and make sure they are the same size. Then set them aside, let them cool.

Now prepare the stuffing. Finely chop the onion, champignons, rub carrots on a fine grater, then chop the garlic and mix everything. Put the stuffing in the pan and fry on low heat, then put everything in a separate bowl. There, add mayonnaise, sour cream, chopped herbs - dill and parsley and again add chopped garlic (one clove). Stir all this mass for the filling, smear each liver pancake with it, and also fill the sides with a filling, if it remains. Rub a melted cheese grater on top, by the way, it will be better to rub if you hold it in the freezer for a bit. Also decorate the top with greens.

Korean carrot liver cake

Spicy lovers will like Korean carrots for those who love spicy food. Cooking is not very long, but if you are inclined to be overweight, then you should not get involved in it, since the liver cake is very high in calories and is better on holidays.

You will need: a kilogram of beef liver, 4-5 small onions, 3/4 cup flour, two carrots, two eggs, 150-200 g Korean carrots, 3-4 garlic cloves, 400 g mayonnaise, salt and pepper to taste, vegetable oil.

Cooking Grate carrots. Peel the onion from the husk and cut into three equal parts. The first part will go for minced liver, the second should be cut and fry with carrots, and the third part also finely chopped and left for the marinating. To marinate the onions should fall asleep in a tightly closed dish, and then pour water and vinegar, divorced in equal amounts. Onions should be well covered with water and vinegar, then add half a teaspoon of salt, 1 tsp. spoonful of sugar and leave to marinate thoroughly for 30-45 minutes, then fold the onion into a colander and rinse with water. The filling for the cake is ready - it will be fried onions with carrots, Korean carrots and pickled onions.

Now proceed to cooking pancake dough. Grind the liver and onion in a blender. Add two eggs to the minced meat, salt and pepper to taste and add 3/4 cups of flour, while gradually pouring the flour and stir to avoid lumps. The result is a dough for baking. Start frying cakes, you can fry them both in a medium-sized pan and on a large frying pan, but it will be easier to turn them over a large one. So, fry the liver pancakes on both sides and put them on a separate plate so that they cool down.

Each pancake carefully grease with mayonnaise and lay out the filling on it - fried onions and carrots, pickled onions and Korean carrot. And so every cake, except the top. You should have about six layers of cakes. Make such a filling on the top layer - mix the mayonnaise with grated garlic and brush them with the top pancake and sides of the liver cake, you can also decorate it with greens on top.

Do not forget that the liver cake needs at least an hour to stand in the fridge so that it is soaked with filling, so it will be even tastier, after which it can be served at the table!
