Kozinaki at home

The name of such sweetness is kozinaki. The history of kozinaka is old, but not everyone knows it. Ancestor of the delicacy was the Persian king Darius, who discovered the sesame gozinaki during one of the festivities dedicated to the victory. Even then, this sweetness was considered a symbol of youth and victory.

Initially, only nuts in honey were considered kozinaki - a national Georgian dish. Now, in stores more often you can find the traditional for Russia kozinaki - sunflower seeds in caramel. There are several other types of kozinaki, such as peanuts and sesame. Pine and hazelnuts are also suitable for kozinaki. Today, dried fruits, raisins and chocolate can be added to this delicacy, which makes kozinaki more delicious.

Kozinaki - Eastern sweetness, came to us from warm Georgia, famous for its hospitality. How else? Only a hospitable person will be able to feed his guests such yummy. In antiquity, even warriors were greeted with kozinaks from the battlefields, which in the original are called "gozinaki" - in the Georgian manner. The fortress of kozinaki served as a sign of strong and long love, because lovers often gave each other such sweet gifts made with their own hands.

  • Honey - 0.5 kg
  • Walnuts - 0.5 kg
  • Sugar - 2 tsp.

Cooking method kozinaka

  1. Finely chop the nuts (preferably in a blender) and fry without oil
  2. Mix honey with sugar and mix.

  4. Remove from heat and cool honey. Repeat all this 2 more times and eventually get honey syrup.
  5. When honey boils 3 times, add nuts to it and let it stand on the fire for 10 minutes.
  6. While the nuts and honey are stewing, prepare a board and moisten it with water.
  7. Lay out the finished casinos on the surface and roll out with a rolling pin dipped in water.
  8. Hurry is not worth it, but it is also not necessary to delay. Roll honey must be promptly, until he froze. Then cut your casinac into pieces and fold it into a plate. To prevent the pieces from sticking together, cover each layer of kozinaki with pastry paper or foil.

Gozinaki species

All kozinaki recipes are based on one algorithm. Another thing is that you can choose the fillings and additives for your sweetness. In the modern supermarket you can find a whole bunch of quality goodies that can be added to the casinos. For example, if you bore the usual and traditional casinac, you can combine pistachios, sesame, honey and sugar. Hazelnut and pistachio can also be combined perfectly. If you do not like all of the above, mix what you like, and let, at first glance, the components of your kozinaki in ordinary life will not be combined, leave everything as it is and create.

Types of kozinaki differ from each other only in ingredients. You can not take as a basis for any one particular kind of nuts, if you are afraid to get better.
