How to cook pea soup with smoked meats

What could be better for dinner than a bowl of hot soup? This dish is present in all cuisines of the world. If we talk about pea soups, they are cooked in many countries, but in Russia they are especially popular. This soup has a long history, and its best recipes are passed down from generation to generation.

Most often, this soup is made from dried peas. In different countries, it is prepared according to different recipes, somewhere added cheese, somewhere garlic, and somewhere even dry wine! If you want the dish to have great taste, you need to choose the right beans. Dutch brain cultivars are best suited. Immediately before cooking, the peas are soaked in almost ice-cold water for several hours, during which the water is periodically changed.   1. Dried crushed peas - 900 g

Cooking:

  • First you need to soak the peas in cold water for several hours (you can do this in the evening).
  • Rinse the meat well and put in a saucepan, pour 5 liters of water, put on the fire, bring to a boil and cook for half an hour.
  • After it is necessary to get the meat out of the pan, cut the bones, cut the flesh into small pieces and put it back into the broth.
  • After soaking the peas, rinse thoroughly in a colander and add to the broth, add salt and cook, stirring regularly.
  • Onions, carrots and garlic need to be peeled. Grate carrots, chop onions into small cubes, garlic should also be chopped. Vegetables must be shifted to a deep frying pan, pour in oil and fry on low heat for 15 minutes. It is necessary to ensure that they are not burned.
  • When the peas melt (it usually takes from 30 to 60 minutes after boiling), it’s time to pour the vegetables in the soup, mix well, let them boil for 5 minutes and remove the pan from the fire, add the bay leaf. Then the dishes should be covered with a lid and leave for 15 minutes.
  • Now you can start cooking toasts. To do this, you need to cut the bread into cubes and dry to a ruddy color in the oven.
  • Before serving, the soup must be stirred, poured into plates, put the croutons.

  2. Bacon (can take bacon) - 300 g
  3. Onion - 1 pc.
  4. Carrots - 1 pc.

  • Pour 1.5 liters of peas into cold water and leave for 5 hours. Then it must be boiled in the same water for 1.5 hours. Cooking time depends on the pea variety, it may be enough for 1 hour, but in the end it should become soft.
  • Peel and finely chop the onions, grate the carrots and grate them, then fry them in butter, and then add them to the peas for 15 minutes until cooked.
  • Bacon cut into cubes and fry in butter.
  • Vegetables with peas, along with the liquid, pour into a blender and cook mashed potatoes, then pour back into the pan, add the fried bacon and bring to a boil. Salt to taste.

  • Pour peas for several hours with cold water.
  • Peel the potatoes, chop them, put them in a saucepan with water and put them on the fire, add the prepared peas to the same place and cook until the beans are ready.
  • Chicken cut into pieces and add to potatoes and peas.
  • Grate carrots, cut onions into cubes and fry in vegetable oil.
