Composition:

  1. Vegetable oil - for frying
  2. Pickled cucumber - 1 pc.
  3. Dried mushrooms - 100 g
  4. Onions - 1 pc.
  5. Herring- 100 g
  6. Salt and pepper to taste
  7. Parsley - for decoration

Cooking:

  • First you need to cook the mushroom stuffing. To do this, boil dried mushrooms in lightly salted water and fry them. Peel and finely chop the onion. Add it to the mushrooms and fry until golden brown. Salt and pepper the mixture.
  • Beat off the herring fillet and wrap the minced mushroom in it. Cut the finished rolls in half, place the quartered pickles on top and garnish with parsley sprigs. So that the rolls do not fall apart, poke them with skewers. Such a cold snack is the perfect party treat.

Composition:

  1. Perch - 1 kg
  2. Fish broth - 1 l
  3. Gelatin - 40 g
  4. Egg whites - 2 pcs.
  5. Carrots - 1 pc.
  6. Onions - 1 pc.
  7. Parsley root - 1 pc.
  8. Lemon-½ piece
  9. Greens to taste

Cooking:

  • Wash and cut the fish. Boil it in salted water and cool. Strain the obtained fish broth. In a separate bowl, soak the gelatin in a small amount of cold water. After dissolve it in hot fish broth. When the gelatin and broth are cool, add raw proteins.
  • Peel and finely chop the parsley onions and roots. Slice peeled carrots into slices. Add vegetables to the broth, put it on the fire and boil until it becomes transparent. Strain the ready broth and cool.
  • Pour a little jelly-like broth into the dishes for the filler, spread the pieces of fish on top, place the lemon slices, greens and vegetables. Fill the jelly with the remaining broth and refrigerate until frozen. Ready aspic is served with mustard or horseradish.

Composition:

  1. Saira - 1 bank
  2. Hard cheese - 250 g
  3. Cottage cheese - 4 tbsp.
  4. Lemon - 1 pc.
  5. Pickled Gherkins - 4 pcs.
  6. Greens to taste
  7. Mayonnaise - to taste
  8. Salt and pepper to taste
  9. Olives - for decoration

Cooking:

  • Cut the cheese into small squares and cut out circles of 5 cm in diameter. Drain the saury from the jar, mash them with a fork, add the cottage cheese. Rub the gherkins on a fine grater and add to the fish-cottage cheese mass. Mix everything well. Salt, pepper.
  • Make small meatballs from the prepared mass. On one circle of cheese lay out the resulting meatball and cover it with another circle of cheese. Dip cheese rosettes in mayonnaise and sprinkle with finely chopped greens. Decorate the outlet with rings of olives and lemon wedges.

Composition:

  1. Salmon - 200 g
  2. Olive oil - 50 ml
  3. Mint - 5 sheets
  4. Red onion - 1 pc.
  5. Lime - 1 pc.
  6. Ginger Root - 30 g
  7. Soy Sauce - 30 g
  8. Salad to taste

Cooking:

  • Peel and finely chop the onion, finely chop the mint leaves. Add olive oil, soy sauce and lime juice.
  • Grate ginger on a fine grater, squeeze juice out of it and add to sauce. Beat the mixture with a fork or a whisk.
  • Finely chop the salmon, put it nicely on a plate, garnish with salad and pour over the prepared sauce. The appetizer is very tasty and light.

  1. Salted herring - 0.5 kg
  2. Salted cucumbers - 3 pcs.
  3. Carrots - 1 pc.
  4. Vegetable oil - 3 tbsp.
  5. Water - 140 ml
  6. 6% vinegar - 140 ml
  7. Onions - ½ pcs.
  8. Bay leaf - 1 pc.
  9. Pea pepper - 5 pcs.
  10. Salt and sugar to taste

Cooking:

  • Soak herring, clean it from skin and bones. Separate the milt from the fillet and soak it separately. While the fish is soaking, prepare the dressing. Peel and dice the onions. In a separate bowl, mix water, pepper, sugar, salt, bay leaf. Add chopped onions. Put the mixture on the fire and boil. After cooling and add vinegar.
  • Cut the cucumbers and carrots into slices. Put vegetables on herring fillet and roll them up tightly. Pierce the ends with a wooden skewer, put in a jar.
  • Soak the milt wipe through a sieve, mix with vegetable oil and add vinegar dressing. Prepare the sauce, pour the herring in a jar, cover with polyethylene or parchment and store in the refrigerator overnight. During this time, the appetizer should be salted.

Cooking:

  • Peel the potatoes and grate it. Well squeeze out so that the excess water is glass. Peel and finely chop the onion, mix with the potatoes. In a separate bowl, beat the eggs, flour, salt and pepper. Add potatoes and onions.
  • Heat the butter in a pan, spoon the pancakes into the pan and fry from 2 sides until tender. Put ready-made potato pancakes on a paper towel to drain excess fat.
