Creme brulee

From the French "creme brulee" literally translates as "burnt cream." It is a dessert of custard with caramel crust. The exact homeland of creme brulee is unknown, but the first mentions date back to 1691. The classic dessert is made from sugar, milk, vanilla, cream and yolks.

Composition:

  1. Milk - 1 L
  2. Egg yolks - 6 pcs.
  3. Granulated sugar - 250 g
  4. Flour - 3 tbsp.
  5. Cinnamon - to taste;
  6. Vanilla sugar - 1 tbsp.
  7. Lemon zest - 1 tbsp.

Cooking:

  • Pour 800 ml of milk into the pan, add lemon zest, vanilla sugar and cinnamon. Bring to a boil and simmer over low heat for about 5 minutes. 100 ml of milk, beat with yolks until smooth.
  • Beat the remaining 100 ml with flour. Pour 2 cooked mixtures into the milk taken from the stove. Stir until smooth, put on a small fire and cook until thick. Pour the obtained cream into molds and put in the refrigerator for 1 - 2 hours.
  • While the dessert is cooling, prepare the caramel: pour the sugar into a small saucepan, put it on the fire and cook until it melts. Pour hot caramel over dessert and set to freeze for 15 minutes in the refrigerator. Classic creme brulee ready!

Composition:

  1. Cream - 300 ml
  2. Milk - 200 ml
  3. Egg yolk - 4 pcs.
  4. Lemon - 1 pc.
  5. Pine nuts - 50 g
  6. Honey - 2 tbsp.
  7. Vanilla - to taste
  8. Brown sugar - to taste

Cooking:

  • Fry the pine nuts in a pan (without butter) until light brown. Put the nuts in the molds where you will make the dessert.
  • Carefully wash the lemon, wipe dry and rub the zest on a fine grater. In a separate bowl, squeeze lemon juice.
  • Pour the cream, milk, honey into the pan and add the vanillin. Put on the fire, bring to a boil and remove. Add grated zest to the pan, cover and cool.
  • Add the egg yolks to the lemon juice, whisk thoroughly and put into the pan with the cooled milk mass. Pour the prepared mass into molds, put in an oven preheated to 110 degrees for 1 hour.
  • When the creme brulee is ready, remove the tins from the oven, cool and refrigerate for at least 2 hours. Before serving, sprinkle the dessert with sugar and put in a caramelization oven for a few minutes.

  1. Sugar - 100 g
  2. Egg yolks - 6 pcs.
  3. Cream - 350 ml
  4. Milk - 200 ml
  5. Ground cinnamon - 2 tbsp.
  6. Orange - 2 pcs.
  7. Cranberries - 100 g

Cooking:

  • Beat yolks with sugar. Pour cream, milk into the pan, add cinnamon, bring the mixture to a boil.
  • In a separate plate, mix the pulp of oranges and cranberries. Spread the filling in the molds. Pour into the pan to the dairy mixture of eggs with sugar. Put on the fire and boil until the mixture thickens. Pour the cream over the tins, place in the oven preheated to 180 degrees for half an hour.
  • Cool the prepared dessert, sprinkle with sugar and put in a caramelization oven for a few minutes.

Cherry Creme Brulee

  1. Canned cherries - 1 can
  2. Cream - 300 ml
  3. Yogurt - 200 ml
  4. Sugar - 100 g
  5. Vanilla - to taste

Cooking:

  • Drain the juice from the cherries and arrange them in molds. In a separate bowl, whip the cream with yogurt, sugar and vanilla. Fill the molds with cooked cream. Put dessert in the fridge for at least 2 hours.
  • When it is ready, sprinkle with sugar on top and put in the oven for a few minutes to make caramel.

  1. Bananas - 2 pcs.
  2. Brown sugar -3 tbsp.
  3. Cinnamon - 1.5 tsp.
  4. 10 percent cream - 700 ml
  5. Lemon juice - 100 ml
  6. Egg yolks - 7 pcs.
  7. Granulated sugar - 200 g
  8. Coconut chips - for decoration

Cooking:

  • Pour the cream in a saucepan, put on the fire and bring to a boil. Remove from heat, pour the cream into a bowl and cool. In a separate bowl, beat the yolks with sugar until smooth. Add chilled cream, pass the mixture through a sieve.
  • Cut the bananas into thin slices, place them in a bowl, cover with lemon juice, add cinnamon and brown sugar. Mix everything well. Put bananas on the bottom of the molds, pour the egg-cream mixture.
  • Preheat the oven to 150 degrees, put the tins with the dessert and bake for 40 minutes. Cool the prepared crème brulee, then place in the fridge for at least 4 hours. Then sprinkle the crème brulee with sugar and put in a caramelization oven for a few minutes. At the end of cooking, sprinkle with coconut flakes or nuts.

  1. Eggs - 4 pcs.
  2. Sugar - 100 g
  3. Butter - 100 g;
  4. Cream - 500 ml
  5. Milk - 700 ml
  6. Baking powder dough - 1 tsp.
  7. Flour - 700 g
  8. Varenayasgushchenka - 1 bank
  9. Potato starch - 3 tbsp.
  10. Vanillin - to taste

Cooking:

  • Whip butter and sugar in a bowl. In a separate bowl, beat 2 eggs, mix it with sugar, add 300 ml of milk and stir until smooth. Sift flour, add baking powder to the dough. Knead the dough, add the milk-egg mass. The dough should be elastic, soft and not sticky.
  • Wrap the finished dough in foil and put it in a warm place for half an hour. While it fits, get ready to make creme brulee for the cake.
  • Beat 2 eggs with starch until the mass is homogeneous using a whisk or a mixer. Constantly stirring, gently pour 400 ml of milk. Put the resulting mass on a small fire and boil until thick. Cool the mass, stirring constantly, so that no crust forms on the surface. Add condensed milk.
  • Whip the cream and add them to the mass. Knead the prepared mixture with a spoon - the cream is ready! Now divide the dough into 16 equal parts. Roll each part into a thin layer and pierce it with a fork. Cakes are baked in the oven at 200 degrees until cooked. From the finished cakes, cut a circle of the desired diameter, and trim off to the side - they will be needed for decoration.
  • Each cake richly grease the creme brulee, overlaying each other to make a cake. Do not forget to grease the top and sides with cream. Sprinkle the finished cake with dried cuts and put it in the refrigerator overnight to soak it. Cake can be served as a dessert with milkshakes or tea.
