Pastila: the story of a sweet dish

  • Pastila appeared in the East, in the Russian city of Kolomna. The real marshmallow ate few. Elastic and multi-colored bars, sold in stores, taste more like French marshmallows. Natural fruit candy - quite nutritious and healthy product., containing pectin, fiber and vitamins that help maintain health.
  • As a dessert, marshmallow has been known since the 14th century. Until the 20th century, sweetness was written as “fasting,” which was associated with the technology of preparing a sweet dish. Then the marshmallow was made from sour apples (Antonovka, Titovka, Sonelenka), which were mixed with berries (lingonberries, currants, cranberries, bilberries, strawberries, etc.).
  • Initially, honey was added to the marshmallow, then, in the first half of the 19th century, they switched to sugar. The white color of the pastilles gives egg white, but it is not a mandatory component of sweetness. The protein has a whitening function rather than a taste.
  • A traditional pastille was prepared as follows: on a thin linen canvas in a wooden frame, a thick apple and berry puree mixed with honey was applied in layers. The dish is obsessed with the Russian stove. The layers dried out, they were folded into wooden boxes of alder, then again they applied a thick layer of sweet mass. This is a real Russian pastila. Usually it was prepared for the winter.

How to make a pastille at home?

Shepherd at home

Pastila is made from any fruit or berries.. To prepare the fruit is washed and cleaned, then mashed in any convenient way. When the mash is ready, it is put to boil in a metal basin. The mass of mashed potatoes during cooking should decrease by 3 times.

Honey or sugar is added to the finished mass to taste. If the mass itself is sweet enough, it is better not to add sweeteners. Cool the mass and put it in wooden boxes, covered with parchment paper, which is pre-lubricated with vegetable oil. Put boxes of marshmallow in the sun. When the mass becomes dense, it means that the marsh is ready! The finished sweetness can be rolled into tubes and placed in canvas bags.
